Today we started looking more in depth into molecular gastronomy. We split into groups and all worked on different projects: yogurt spheres, chocolate milk gel, chocolate spaghetti, cranberry spheres, chocolate mousse, and popcorn with powderized brown butter parmesan on top. We all used different methods of cooking and made videos of them which you can find on our blog site. Then, after finishing assembling the food, we sat down at our table and ate it. As we ate, we informed each other about how we made the foods. Then, after a quick break, we started research for our final project. We found videos, articles, and lists of recipes to tell us how to make some cool stuff. Examples of ideas about which we are thinking for our last group are smoothie blobs, balsamic vinegar spheres on salad, chocolate air, and hot ice cream. At the end of next week we will all make our final projects and present them to lower/ middle schoolers and to each other.
Here is a picture of what we made today. The mousse is in the cup, the yogurt sphere is the lowest spoon on the right, the chocolate spaghetti is to the right, then the cranberry spheres and then the chocolate milk gel.
